    Hi,
There are several good websites with info on the functionality of ingredients in cookies. I'll list two, the first being more general, the second being more detailed. https://ueat.utoronto.ca/baking-ingredients-function/ http://digitalcommons.unl.edu/cgi/viewcontent.cgi?article=1412&context=extensionhist
Regarding the separation of cookie batter, I'm not sure I have an answer for you. While I tell students it is theoretically possible to separate any mixture, it is not always feasible with everyday techniques and materials. Cookie batter falls into the latter category, as far as I know.
